Steak/Salmon Veggie Potato Bake

Sunday staples: Steak or Salmon + veggie + potatoes


1. Smoked salmon on the Traeger

My hubs marinates a large slab of salmon for 20-30 min prior to cooking with honey, olive oil, soy sauce, hickory liquid smoke, touch of siracha, lemon juice, Italian seasoning, touch of lemon pepper. He smokes it for 20 min on “smoke” then turns up the heat to 225 degrees until cooked (145 degrees internally).


2. Potatoes

-Chop 1-2 large sweet potatoes and 3-4 yellow potatoes (or whatever potatoes you have)

-Drizzle olive oil (approximately 2 tbsp), sprinkle salt, pepper, ranch seasoning, and dried rosemary

-Roast at 350 degrees for 30-45 min until toasted on the edges

-This time we added sliced onions to the mix


3. Asparagus

-Sear in the cast iron with olive oil (approx 1 tbsp), salt, and pepper (my toddler LOVED this tonight, which was out of the ordinary )
